This dish is a great alternative to plain old cole slaw and makes a fantastic side dish to just about any meal, but especially with grilled chicken, pork, or fish. The next time you're asked to bring a dish-to-pass, wow them with this slaw.

Fennel & Apple Slaw

Make the dressing. Add these ingredients to a jar with a lid, and shake to emulsify. 

¼ cup EVOO
¼ cup apple cider vinegar
1 tsp honey
2 Tbsp. freshly squeezed orange juice + some of the zest
1 tsp honey mustard
½ tsp kosher salt
½ black pepper

Make the Slaw. Add these ingredients into a large bowl. Then add the dressing and toss to coat.

3 cups finely shredded green cabbage
2 small fennel bulbs, core removed, and thinly sliced. Reserve fronds for garnish
2 stalks celery, thinly sliced
1 honeycrisp apple, julienned
Optional: add a 1/4 cup sliced green olives

Serve immediately or refrigerate until ready to serve. Enjoy!
