I chose Prime Rib as the Valentine's Day dinner entree. This no-fail roasting method does require a bit of planning, but if you have an oven that automatically shuts itself off you can get this started at your convenience and then finish it off, timed perfectly, for when you want to serve dinner.
Perfect Prime Rib Everytime [any size, with or without the bone]
Preheat the oven to 400 degrees.
Season the meat to your liking. I use kosher salt, cracked pepper and 3 cloves of crushed garlic. That's it. If you have a favorite beef seasoning recipe, go for it. But do not rub the roast with oil, use a dry rub only. Place the meat fat-side-up on a rack in a roasting pan and then into the oven.
Roast for exactly one hour. Turn the oven off and leave the roast in the oven for a minimum of 4 hours and up to 8 hours. DO NOT OPEN THE OVEN DOOR during this time. Then turn the oven back on at 400 degrees and cook for one more hour. DO NOT OPEN THE OVEN DOOR. No peeking. After an hour, remove the roast from the oven and let it rest 20 minutes before carving.
