Valentine's Day Dinner: Cocktails

Are you wondering what to give him/her for Valentine's Day this year? Skip the standard offering of chocolates and/or flowers and grab your apron because nothing says "I love you" like a home cooked meal. Over the next six days, I am going to put together and post a menu for you that's sure to please and best of all, it's gourmet and it is not complicated. The meal will include a cocktail, appetizer, entree, side dish, veggie and dessert. These six recipes are from my arsenal of Best Ever dishes. They're old stand-by's, foolproof and outstandingly delicious.

Here's the first recipe:

Champagne Martini
4 scoops of lemon sorbet
2 oz. chilled citrus flavored vodka
2 oz. champagne (Prosecco is an awesome choice, too)

Optional: sugar the rim of the glass

Place the sorbet in a blender and while blending on low, slowly add in the vodka. Hand stir in the champagne. Pour into chilled glasses and garnish with a sprig of mint. Spring for the mint people! It's Valentine's Day. Yields: 2 good-size cocktails. Fire that blender back up after dinner for round two.
