Here's one of my all-time favorite avocado recipes; it makes me recall summer picnics,
parties and old friends.
1 can black beans, drained and rinsed
1 can Mexican Corn
1 small jar pimento
1 small can green chilis
3 tomatoes, chopped
2 ripe avocados
1 bunch green onion, include some of the greens
1/4 cup olive oil
1/4 cup red wine vinegar (I sometimes use rice wine vinegar)
1 pkg. Good Seasonings Italian Dressing
Chop the avocados and pour the vinegar over them to prevent browning. Mix all the other ingredients together in another bowl. Add the chopped avocado. Refrigerate for a few hours. Serve with Big Scoop Fritos. Enjoy!
