A soak in the tub with epsom salts and eucalyptus essential oil last night got me through it, but it was a rough one. I went to bed hungry and pissed off at the world that I've gained 10 lbs. over the Holidays because I lack willpower.
Here's something that I know to be essential to staying compliant on Whole 30 - quick and easy meals, meals I can make for just myself, in a hurry because I worked late or I need to get to the soap shop and I'm starving. So I will share two of those meals with you today, in case you're thinking Whole 30 is too restrictive. Truth is Whole 30 IS restrictive, but with some planning and a list in hand before hitting the grocery store you can do it. If I can, you can, too.
Eggroll in a Bowl:
1 lb. ground pork
6 cups bagged coleslaw mix
4 cloves of garlic, minced
2 Tbsp. ginger, minced
3 Tbsp. gluten-free soy sauce
1/4 cup chopped green onion
1 Tbsp. sesame oil
Heat 2 Tbsp. olive oil in a large skillet, add the pork and cook stirring to crumble until cooked through. Do no not drain. Add the garlic, ginger, soy sauce and coleslaw and cook 3-4 minutes, covered, so the coleslaw softens a bit. Remove from heat and top with the green onion and drizzle with the sesame oil. Eat up! Enjoy. This makes a lot of leftovers which is a plus for me, I love leftovers.
Easy + Delish Breakfast Bowl
2 - 3 eggs ( I use 2 eggwhites and 1 whole egg)
Jarred salsa, my favorite is Trader Joes Salsa Verde
Diced sweet potato, (I keep a container of these in my frig at all times)
Heat olive oil in a skillet, add the sweet potatoes and a dash of sea salt, fry about 5 minutes. Remove to a shallow bowl, top with ghee. In the same pan, scramble the eggs, remove to bowl and top with salsa and 1/2 avocado.
Check-In: I woke this morning feeling less headache-y and with more energy than I've had in the last few weeks, this could be because I've comitted to going to bed earlier at night now. Whatever, it's a small victory and I'll take it.
I accepted an invitation this morning to go over to a girlfriends house tonight for a drink before remembering that I'm on Whole 30 and can't drink! So I have some anxiety about this because my willpower is weak right now. It's only Day 3 and I could easily be swayed to have that drink and then just start over tomorrow at Day 1. But recommitting to eating healthier is a lifestyle, not a diet, and I need to remind myself that I can socialize without drinking alcohol. Wish me luck, I'll let you tomorrow how I did.
