Recipe of the Month: Fast & Delicious Wonton Soup (my take on the viral Trader Joe's recipe)

One of the most important self-care tips I can offer you is this: Eat Well | Be Well. 

Cooking healthy and delicious meals at home does not need to be complicated, time consuming, or expensive. This Won Ton soup will go from your freezer to your spoon in under a half-hour and it will not disappoint. Nothing says "comfort food" like a bowl of homemade soup, am I right. Keep these Trader Joes staples on hand and you will be able to toss together a pot of this soup at a moments notice.

Fast & Delicious Won Ton Soup:

Add a splash of olive oil to the bottom of a large dutch oven and saute' the following for 5 minutes:

3 ribs of celery, thinly sliced
7 Baby Bella mushrooms, thinly sliced
5 greens onions, sliced with some of the greens

Then add:
1 clove of garlic, chopped fine
Knob of ginger, peeled and chopped
Red pepper flakes, to your taste (substitute Sriracha sauce for less heat)

Saute' JUST until the garlic is fragrant (careful not to burn the garlic or your dish is ruined!)

Then add:
1 (32 oz.) carton of Trader Joes Miso Ginger Broth
1 1/2 cups of a good chicken broth
Splash of sesame oil
2 Tbsp. of low sodium soy sauce

Bring the pot to a boil, then turn down the heat and simmer for at least 20 minutes, longer if you have the time.

Taste before salting, and then add sea salt to your liking.

Then Add:
A bag of frozen Trader Joes Chicken & Cilantro mini wontons
1 carrot, shredded on the large end of a cheese grater

Turn up the heat and boil for 3 minutes, until the wontons float to the top.

Optional, add: baby bok choy, baby spinach, baby kale

Serve it up in deep bowls with a crusty bread and enjoy!
